These dairy free frozen yogurt bars were actually a happy accident. I set out to make these frozen yogurt cups but quickly realized I didn’t have the patience to line muffin cups with melted chocolate. So I decided to pivot and make something closer to the fruit and yogurt clusters that I’d also been seeing all over Instagram.

I also got creative with the frozen yogurt filling because I wanted more complex flavors and am rarely satisfied with a dessert that doesn’t heavily feature chocolate. I swapped peanut butter for tahini and added cocoa powder, chopped nuts and strawberries. This was very much a make-it-up-as-you-go (and hope for the best) kind of improvisation so I was very surprised when they turned out absolutely delicious.

These Strawberry Chocolate Tahini Frozen Yogurt Bars have more protein (and less sugar) than your typical ice cream bar which means you can enjoy them as dessert or a midday snack without spiking your blood sugar. I made my frozen yogurt bars dairy free by using coconut yogurt but you could also use greek yogurt which would up the protein content a bit.

Pro tip: If you have popsicle sticks, press those into the center of the yogurt when you freeze them to make them easier to dip in the chocolate and a little less messy to eat!

Strawberry Chocolate Tahini Frozen Yogurt Bars

These summer-ready treats are just cool, creamy and just sweet enough! Protein, healthy fats and probiotics make them a nutritious dessert or snack for a warm day.

Ingredients
  

  • 1 cup regular or dairy free yogurt I used Harmless Harvest plain coconut yogurt
  • 1 scoop vanilla protein powder I use Ritual Vanilla Protein
  • 1/3 cup tahini
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almonds or cashews, chopped
  • 3/4 cup fresh strawberries, chopped
  • 1 pinch sea salt
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions
 

  • Add yogurt, protein powder, tahini, maple syrup, vanilla, strawberries, nuts and sea salt to a medium-sized bowl and mixed until evenly blended.
  • Scoop dollops of yogurt mixture onto a parchment lined baking sheet. I did 6 larger scoops but you could also do smaller scoops for mini clusters.
  • Place baking sheet in freezer for at least 4 hours or overnight.
  • After your yogurt clusters are frozen solid, prepare your melted chocolate for dipping. Fill a sauce pan with 1-2 inches of water and place over medium-low heat.
  • Place a metal bowl on top of sauce pan and add chocolate chips and coconut oil to the bowl. As your water begins to simmer, stir chocolate until melted.
  • Remove melted chocolate from the heat and let cool a few minutes.
  • Using 2 forks dunk each frozen yogurt cluster into the chocolate and turn to coat.
  • Place back on the parchment. Once all are covered in chocolate place back in the freezer for another few minutes until chocolate is hardened.
  • Enjoy immediately or store in the freezer in a sealed container. Before eating, you may want to let them sit at room temperature for 10-15 minutes so they are softer to bite into.
